Entry 16: Foods of Thedas: On Tap at the Hanged Man

Greetings dear readers and Thedosian enthusiasts. Today's entry is less about food and more about places in Thedas. Thedas is a hard land and much of what we have experienced in the games has proven such to be true. So is it any wonder the taverns, inns, and bars across this treacherous, dark fantasy world are well known and loved? A sturdy bar and stool with a strong drink is sometimes all anyone needs to ease their mind momentarily from the chaos and hardship that surrounds us. Add in a musician or a storyteller, season liberally with honest patrons and you have yourself a local favorite that'll cross everyone's lips around town.

Throughout all three Dragon Age games, there are a number of establishments mentioned and available to visit, from the Gnawed Noble Tavern of Denerim to the Herald's Rest at Skyhold, and many in between. But most notable, most memorable, and perhaps most central to any of the games is the Hanged Man of Kirkwall in the Free Marches.

The Hanged Man is more than a local favorite in Thedas, it is an iconic and infamous watering hole for both the truly brilliant and the utterly desperate. Featured prominently in Dragon Age 2, the Hanged Man is home to two game companions (Varric and Isabela), a couple of testy servers (Norah and Edwena), some local seat warmers, and a healthy collection of stories, codices, quests, and gossip - plus loot behind unlocked doors. The Hanged Man acquired it's name, according to Varric, "...because people used to be hanged by their feet at the spot..." My only question here is "As punishment? Or for sport?"

This hub of varied people and quests is particularly dear to my heart as Dragon Age 2 was the first video game I played to completion. It was also the first BioWare game I played on my own. My first Hawke was a purely sarcastic dual wielding rogue who fell hard for Anders and his cause. It was a dark fairy tale of betrayal and swagger where no chest was safe and no secrets were left untold. While I have played Dragon Age: Inquisition more, Dragon Age 2 remains my favorite game; not just of the franchise, but overall my favorite video game. I have replayed it about two dozen times and still feel like I haven't done or seen everything. There is a lot to love about our lucky hero and their friends, as well as their usual drinking spot.

I believe Dragon Age 2 is a fantastic and well-aged video game because the characters and the environments they live and interact in are rich and authentic. The Hanged Man is a big part of what makes Dragon Age relative and represents some of the the best parts of the franchise. It is easy to imagine Hawke and the whole party getting together around a table near the fire with another round of swill just delivered by Norah. Varric entices the gang into another round of Wicked Grace or Isabela goads Carver or Fenris into an arm wrestling challenge. And maybe Anders and Sebastian even find common ground when they can't help laughing at one of Hawke's well-timed puns; Aveline or Bethany will likely groan. And Merril is probably walking in now, knee deep in mud, late because she got lost again. The whole group suddenly shuffle around the table to make room for her. Varric offers to buy her a drink and Hawke hands her a scarf to use to wipe her feet. It is a perfect and somewhat familiar scene.

is a regular:

"If you order 30 (doesn't have to be in same visit) drinks at the bar, whenever you enter the bar after that, the patrons will all shout "HAWKE!" This is a reference to the television series Cheers, in which all the patrons would shout "NORM!" whenever he would enter the pub."

"Additionally, Isabela comments, when passing the tavern, that 'sometimes you want to go where everybody knows your name.' This is a reference to Cheers's theme song."

I'll be honest, my Hawkes were usually too preoccupied to drink and approached the barkeep for rumors rather than than spirits, so I don't know how accurate the Wiki is on this detail. But I have heard that many players have not been able to trigger this call out and reference. Even Dragon Age lore aficionado Ghil Dirthalen on YouTube, who expressed her frustrations in her pop culture focused video.


The Hanged Man reminds me of the places I visited and drank at when I could afford to go out and drink. In my early twenties I usually avoided my dorm or apartment as a place of study to take in the energy and discord of many a bar or coffee shop. I would spend how ever many hours my laptop battery had propped up at a stool or tucked away in a corner booth, tapping away and taking in the rising noise and chaos or the long, low lulls between busy periods of time. There were times when I recognized faces or moods of patrons coming and going, and there were times I heard familiar stories or jests told among strangers. Happy Hours were the best and worst, best for drinks and worst for concentration on school work. If you've been reading from the beginning, you probably know that I am not a $1 beer mage and instead enjoy the finer brews on tap. But there were times I took what the house was peddling for pennies in the midst of impulsive inspiration while furiously clacking out the week's creative writing assignment during the height of a Happy Hour. After all, I had to learn someway that I do not like the swill on tab. Friends both new and old would meet up with me as they could and move along when they had to through evenings of lights and spirits.

There have been many regular drinking establishments in my life, like the classic Irish pub, O'Gara's and the even more Irish pub, The Local, of the Midwest, US; as well as stranger but still reassuringly familiar scenes at places like the classic sports bar Punter's on the Eastcoast and the more glittery, machizmo styled Bimbos Cantina on the West. Wherever I find a bar stool and a Happy Hour, I find familiarity and the spirit of Hawke, their companions, and even a few of Varric's stories. The cacophony of excitement that fills the mind and the mug can be deafening and enlightening.

Occasionally, like on those nights I remembered to pack my power cord, I stayed long enough to enticed myself into ordering a small plate from a Happy Hour menu. I would usually order a hummus plate with vegetables or (in my pre-vegan days) a plate of mozzarella sticks, or some unique bite to eat. At Punter's, I enjoyed a slice of pizza through a window in the wall. And the deal on tacos at Bimbo's alone was worth the visit. Back in Kirkwall, the Hanged Man affectionately serves something I am interested in making in my Skyhold's kitchen some day. It is said to be a delicious, hearty delight capable of curing any hangover: Pig Oat Mash. The recipe for this dish can be found in the World of Thedas Volume 2 book, which describes it as best served with brandy-spiked-cider. Pig Oat Mash appears easy to make, so expect a veganized version, dear reader, in the future for your enjoyment.

Bars and pubs have the power to connect and crisscross lives, open minds, and weave stories in unique ways. In conclusion, and in the spirit of the Hanged Man - Thedas' favorite shit hole - when you next walk by a pub, bar, or cafe with an interesting energy and a solid, empty stool catches you eye, see about taking a seat. Have a care to listen to what and who is around you, have a look at the Happy Hour menu, and don't be afraid to try the swill on tap.

Entry 15: Personal Favorite: Chocolate Chip Cookies

There are some companion characters from the Dragon Age games who display personality traits or quirks that are incredibly relatable. There's Leliana's love for shoes, Varric's affinity for the Hanged Man, Josephine's secretive pride in her doll collection, and perhaps most memorable for me, Sten's curious excitement for cookies.

Sten is a unique character from Dragon Age: Origins who seems to be loved overall by the Dragon Age fanbase. He is a hornless Qunari warrior, has a stoic and uniquely honest demeanor, and is rather cultured. According to the Dragon Age Wiki, Sten has shown an interesting sense of curiosity since a young age. And while "hornless Qunari are rare ... a curious Qunari was unheard of." As a member of the Qunari military, his background is fraught with violence from patrolling Seheron, the Qunari-occupied island to the north, to clashing in battles with forces from the Tevinter Imperium. But he nevertheless maintains a calm sense of clarity and curiosity in his outward behavior. He is proficient in the in-game "common tongue" and Tevene, the official language of the Tevinter Imperium. Sten also appreciates fine art, such as portraiture and sculpture.

If your player character recruits Sten to your party, you can learn he was sent to Ferelden by the Qunari military leader, the Arishok, and tasked with learning about the blight. When you speak to Sten at your party's camp, you can ask him about his thoughts on Ferelden, to which he replies unfavorably. But you can press him for more and he will describe his liking of a sweet, crumbly, bread-like food item:


Honestly, I felt compelled to make the poor, big guy cookies right then to make him feel better, and then send the recipe and a sack full of ingredients with him back to Qunari lands. Chocolate chip cookie ingredients, to be specific.

This Lucrosian mage has been making chocolate chip cookies for a long time, and when I first started eating vegan I thought my cookie-baking days were over. I worked hard to develop a perfectly chewy chocolate chip cookie recipe for years and did not initially believe I could replicate such success with vegan ingredients. Fortunately, I was wrong! I have been able to modify and adjust my chocolate chip recipe with some help from one of my favorite vegan bloggers and YouTube presenters, The Viet Vegan. She has a fantastic chocolate chip cookie recipe that is very close to mine. This recipe is one of those never-fail staples of Ferelden that can ease any adventuring party's minds, hearts and empty stomachs. Take a look at the sections below for my recipe and sources.

To begin, I arranged my ingredients on my counter: ground flax seed, all-purpose flour, baking soda, baking powder, salt, white sugar, brown sugar, vanilla extract, semi-sweet chocolate chips, nuts, and vegan butter.

I regularly reuse glass jars. That's why my baking soda is in a jam jar with a salsa lid.
The secret to my new-found success.
To begin, I like to melt my vegan butter over low heat on my stove.


After setting that up, I turned my attention to the flax seed. Ground flax seed mixed with water is an excellent replacement for eggs. Flax seeds are nutritious and low-calorie. When ground and set with water, the mixture develops a goop-like consistency that bonds well with various wet and dry ingredients.


After about 10 to 15 minutes, test the flax seed consistency with your finger to make sure it is combined and goopy-feeling.

Then I measured and combined my dry ingredients.


Once the butter had melted completely, I poured it over the sugars...


And mixed together well...


And then added my vanilla extract.


From here, my prepared flax seed was ready to be added.

Mm, mm, mm, smooth perfection:


It was time for the chips and nuts. I used walnuts and chocolate chips.


The chips are leftover remnants from my pre-vegan days so they are not vegan. You can substitute with carob bits or vegan baker's chocolate. You can also look for vegan chocolate chips are your local market. If you find a brand at a decent price, please let me know.

The next step is to wait. I like to place my cookie dough in my refrigerator for about 30 to 40 minutes to chill. Chilling your dough makes for a chewier cookie, but this step is entirely optional. If you are short on time, you can skip this step and still have delicious cookies.

While my dough chilled, I cut and arranged parchment paper on my baking sheets.


Not much to clean up, so I left that for later.


Once the dough has chilled slightly, I began scooping and rolling out 2-inch balls onto my baking sheets.




And after about 10 minutes in the oven, I had amazingly perfect cookies!


This recipe yields about 25 sizable cookies.



...Plus a little extra dough to save for eating later.


These cookies were so delicious, I had to have traps set around them to keep the good folks of my Skyhold from eating them too quickly.






The Qunari are indeed missing out.  The new Arishok must send envoys to collect chocolate chip cookie recipes to test out and then bake to distribute throughout the whole of Qunandar. Maker, that would be a great side quest in Dragon Age 4.

These cookies can be stored in an air-tight container for up to a week. If you have any leftover dough, I recommend eating that up within 3 or 4 days.


Chocolate Chip Cookies

Ingredients:

1 tbsp ground flax seed + 4 tbsp warm water (set aside to gel for 10-15 minutes)
1 c vegan butter (such as Melt)
1 c white sugar (can be reduced to 3/4 cup)
1 c brown sugar (can be reduced to 3/4 cup)
1 tsp vanilla extract
1 tsp baking powder
1/2 tsp baking soda
2 1/2 c all-purpose flour
A pinch of salt
1 - 1 1/3 c semi-sweet vegan chocolate chips
3/4 - 1 c crushed walnuts (or crushed almonds)

Directions:

Preheat oven to 350ºF.
In a small bowl, combine ground flax seed and warm water, set aside to gel for about 10 minutes.
Melt butter in a small pot over low heat.
Stir baking powder, baking soda, flour, and salt together.
Using a stand mixer or hand mixer (or a spatula and a lyrium or stamina potion) beat melted butter with white and brown sugar until light, creamy and fluffy.
Add vanilla extract and flax mixture, beat until well mixed.
Add dry ingredients in 3 or 4 parts and mix well.
Fold in chocolate chips and crushed nuts with a spatula.
(Optional: Chill dough in your refrigerator for 30 to 45 minutes. Fold over a few more times with a spatula.)
Roll 2-inch balls onto a baking sheet lined with parchment paper.
Bake for 8-10 minutes or until the edges just begin to brown and cookies are slightly puffy. Remove from oven and allow to cool for a minute on baking sheet.
Move cookies a wire rack to cool completely.
Enjoy immediately or store in an airtight container.
